1 egg white
85g/ 3 oz. Solomon's Ground Almond Meal
85g/ 3 oz. caster sugar, plus extra for rolling
½ teaspoon almond extract
6-7 blanched almonds, split in half.


Preheat the oven to 180 degrees C/350 degrees F/Gas Mark 4. Line two baking trays with baking paper.
Beat the egg white with a fork until frothy, then stir in the ground almonds, sugar and almond extract, mixing to form a sticky dough.
Using lightly sugared hands, roll the dough into small balls and place on the prepared baking trays. Press an almond half into the centre of each.
Bake in the preheated oven for 15-20 minutes, or until pale golden. Place on a wire rack to cool
