firm MATZO BALLS (KNAIDLACH)



Ingredients

¾ cup Solomon’s Fine Matzo Meal
¼ cup Solomon’s coarse matzo meal
2-3 eggs
1 teaspoon salt
1 teaspoon Solomon's Chicken flavour
½ teaspoon pepper
1-2 tablespoon oil or chicken fat
1 medium onion (optional) chopped



Directions

Fry chopped onion in oil or fat, set aside. Place dry ingredients into a bowl. Add lightly beaten eggs, fried onion or just the oil and just enough water to help it bind. Allow mixture to stand for approximately 15 minutes. Form mixture into balls and drop into rapidly boiling salted water.
Cook covered for approx. 20-30 minutes. Drain and place into soup.

Makes approx. 12 balls.
Matzo Meal can also be substituted for fine breadcrumbs in Schnitzel, meat balls and in anything else one would use breadcrumbs for.
