MUSHROOM & BARLEY SOUP



Ingredients

10g porcini mushrooms
Oil
1 large onion chopped
1 stick celery chopped
1 large carrot chopped
500g mushrooms chopped
1 litre Solomon's Chicken Flavour
⅔ cup Solomon's Pearl Barley
⅓ cup chopped parsley



Directions

Soak porcini mushrooms in 1 cup boiling water for 15 minutes - keep liquid.
Heat oil & add onions, carrot & celery and sauté for 4-5 min.
Add mushrooms, cook for at least 10 min until soft.
Add stock, 2 cups water, porcini's plus their water and barley.
Add parsley.

Simmer for 1 hour.

serves 6-8
