4 egg whites
1 egg yolk, beaten
150 g sugar
1 tablespoon vegetable oil
150g Solomon's Whole Almonds
150g Solomon's Superfine Matzo Meal


Preheat the oven to 180 degrees C. Grease a 26 x 9 cm loaf tin.
Beat the egg whites until stiff peaks form. Add the egg yolk, then the remaining ingredients slowly and mix well. Pour into the prepared tin and bake for about 30 minutes, or until firm and lightly golden. Remove from the tin and allow to stand overnight, or for at least 6 hours.
Preheat the oven to 180 degrees C. Slice the loaf into very thin slices and place flat on ungreased baking trays. Bake for 10-12 minutes, or until lightly browned or crisp. Remove from the trays and cool on wire racks before storing in an airtight container.
