COCONUT MACAROONS



Ingredients

3 egg whites
Pinch salt
½ cup sugar
½ teaspoon lemon juice
2½ cups Solomon's desiccated coconut



Directions

Beat egg whites until stiff, add salt and gradually add sugar while beating. Add lemon juice and coconut and mix gently. Drop from a spoon on to a baking sheet lined with baking paper. Bake 15 minutes at 180 degrees C or until golden brown. Turn off oven and leave to dry out in oven 30 minutes.
